I have recently started to delve into the world of small batch cooking which can be useful when you are either limited in ingredients for full batch versions or you just don't want the fuss of leftovers especially when you live alone.

This is honestly my first time having stuffed jalapenos. In my 35 years of existence....I never! Shocker, I know! But I used up half a brick of cream cheese and I needed to hurry up and use the last half before it expired and I found it! Only need 1/4 of the brick, I ended up using the other 1/4 for cheese and crackers. Ingredients: 3 jalapenos (I used canned pickled jalapenos) 2 oz cream cheese (1/4 of a brick) 2 tbsp shredded cheese generous pinch of garlic powder generous pinch of onion powder 3 slices of bacon (thick recommended) salt and pepper to taste orange pepper as topping Directions: Slice stem off jalapeno and vertically slice jalapenos. Mini Banana Loaf for 1

  If you only have 2 bananas on hand, then here is a very cute yet small recipe for 1 mini loaf BONUS! Not all of the batter will fit, the excess is perfect for 8 mini muffins! Links below right after the recipe. Ingredients 2 bananas - very ripe! 1 cup flour 1/2 cup sugar 1/4 tsp salt 3/4 baking soda 1 egg 1/2 tsp vanilla 1/4 cup shredded coconut 6 tbsp melted butter GLAZE: 2 tbsp maple syrup 6 tbsp powdered sugar 1/2 tsp cinnamon Directions: 1. Preheat oven to 350 degrees. Mash bananas in a bowl. Then add sugar, egg, melted butter and vanilla 2. In another bowl, mix flour, salt, baking soda and coconut. 3. Put the flour bowl and mix in with the wet ingredients. 4. Fill about 3/4 of the batter into the mini loaf pan. 5. Use the remaining batter to use one spoon to scoop into 8 mini cavities. 6. Mac and Cheese for 1

Lovely side with some savory mac and cheese! Don't worry if you don't have the EXACT kind of cheese. Experiment! Half and half isn't necessary or you could make your own half and half if you have milk and heavy cream. I personally fried up some buffalo chicken wings to give my pasta a slight kick. You can too. Update: After making this recipe a few times, I feel it is more appropriate to include a recipe that truly fits a recipe for 1. The slightly bigger batch will immediately follow. Ingredients: 1/2 tbsp butter 1/2 tbsp flour 1/4 cup milk 1/4 cup half and half 1/16 tsp garlic powder 1/16 tsp mustard powder 3/4 cup shredded cheese 1/4 tsp hot sauce (optional) pinch of salt and pepper 2 oz of pasta (can vary slightly more if using a thicker noodle such as rotini) generous pinch of popcorn salt or french fry seasoing is optional for a boost of flavor Directions: 1.
