Yellow Cake for 1
Delicious yellow Cake! I was in such a mood for yellow cake (NOT WHITE) and looky here. There exists a yellow cake recipe that only uses 1 egg (not just yolks like others) I don't like wasting egg so I am particularly glad this used a whole egg. Cake: 1/2 cup + 3 tablespoons all-purpose flour 1 tablespoon cornstarch 3/4 teaspoon baking powder 1/4 teaspoon salt (see notes) 1/8 teaspoon baking soda 6 tablespoons unsalted butter, softened (see notes!) 1/2 cup granulated sugar 1 egg, room temperature 1 teaspoon vanilla extract 1/3 cup buttermilk, room temp (see note for sub) Frosting: 4 tablespoons ( 2oz) unsalted butter softened* 1 cup ( 120g) powdered sugar sifted 1/4 cup ( 20g) cocoa powder sifted 1 1/2 teaspoons milk plus more as needed 1/2 teaspoon vanilla extract Pinch of espresso powder optional Pinch of salt (see notes) Directions: Preheat oven to 350 degrees F. Lightly grease a 6" round pan and lay parchment round on bottom. Cream butter then add sugar. Add
