Alfredo for 1
Love this recipe. This alone gets me full! You can absolutely elevate this meal adding leftover cooked chicken or vegetables. This recipe is just the base Alfredo sauce recipe if you want a small helping in a pinch.
Ingredients:
1 tbsp butter
2 & 1/4 tsp flour
1/8 tsp pepper
1/8 tsp salt
1/2 cup half and half
1/4 cup Parmesan
4 oz angel hair or noodle of your choice
Fettuccine is the default noodle but I personally love angel hair so that's what I used for this recipe. Food scales are cheap and you can find them at garage sales or just online on Amazon. See my pic for reference what 4 oz of angel haor looks like:
NOW TO THE DIRECTIONS:
1. In a 2 qt pot add enough water. During this time, gather your ingredients and warm a sauce pan which takes 10 minutes so keep the sauce pan heat at a medium warmth to preheat.
2. Once your water starts boiling add your noodles.
3. Now starting on the sauce: In the warm sauce pan throw in your butter.
4. When butter is completely melted or close to, add your flour and with a small whisk constantly stir it around until it turns a golden color and smells aromatic like pie crust. Don't let it get too dark and burn.
5. Immediately yet slowly stir in the half and half and ensure no lumps.
6. Add salt and pepper.
7. Add the parmesan and take off heat immediately. It sauce is too thick, use a splash of the starch water from your pot. A SPLASH.
8. Strain noodles and place in bowl and top with sauce. Or other way around if you prefer.
9. STUFF YOUR FAT FACE!
NOTES:
Not gonna lie, I used canned store bought parmesan in a can for this recipe. If you're a good purist, then use the real parm and pat yourself on the back.
You can adjust noodles as necessary. I used approximate measurements and weighed them. I found it was the perfect balance for a reason. However, you can absolutely lower the amount as you wish because that's what I mostly do anyway just winging it. Everything is absolutely up to you to adjust as necessary.
