Delicious yellow Cake! I was in such a mood for yellow cake (NOT WHITE) and looky here. There exists a yellow cake recipe that only uses 1 egg (not just yolks like others) I don't like wasting egg so I am particularly glad this used a whole egg.  Cake:  1/2 cup + 3 tablespoons all-purpose flour 1 tablespoon cornstarch 3/4 teaspoon baking powder 1/4 teaspoon salt (see notes) 1/8 teaspoon baking soda 6 tablespoons unsalted butter, softened (see notes!) 1/2 cup granulated sugar 1 egg, room temperature 1 teaspoon vanilla extract 1/3 cup buttermilk, room temp (see note for sub) Frosting: 4 tablespoons ( 2oz) unsalted butter softened* 1 cup ( 120g) powdered sugar sifted 1/4 cup ( 20g) cocoa powder sifted 1 1/2 teaspoons milk plus more as needed 1/2 teaspoon vanilla extract Pinch of espresso powder optional Pinch of salt (see notes) Directions: Preheat oven to 350 degrees F. Flour Tortillas (6 tortillas) TWO WAYS

Ya crazy if you think there's a recipe for a single tortilla! It's preferable to use lard or shortening rather than butter. It's not the end of the world if you don't have it. Butter will suffice. Don't let the food snobs get your goat. This recipe makes 6 tortillas which is half of a dozen. Perfect for making some quesadillas, tacos or just snacking just by itself!  1 cup flour 1/4 tsp kosher salt 1/8 tsp baking powder 2 tbsp butter room temp 6 TBSP HOT water (as much as you can stand) Add flour, salt and baking powder in bowl and mix. Add room temperature butter and crush with your fingers until pea sized Little at a time add water to incorporate it until it forms a ball. Kneed on flat surface about 5 minutes. Place dough in bowl with a hot towel covered not touching dough. Rest 30 minutes. Form 6 balls. Preheat pan. Roll tortillas with a rolling pin with small amounts of flour if needed. Small Batch Strawberry Paletas

You could say I am on a strawberry roll lately. Who cares?! Here is a bomb ass small batch recipe for strawberry paletas. It's mexican ice cream. I used to LOVE these in high school where they usually get sold from a variety of flavors for only $1. Times have changed so I imagine it's double the price now lol. Mexican ice cream has cream based and water based varieties (think cucumber and lime).  I used a cheapo ice popsicle mold that holds 1/4 cup per mold. This small recipe ended up yielding me 7 paletas. I got the mold at a yard sale but if I had to guess, these probably came from Dollar Tree due to how small it is BUT who says that's a bad thing? I honestly prefer the smaller size for portion control.  I'll test other flavors so be sure to check the paletas tag at the bottom of this post in the coming months.
