Yellow Cake for 1

Delicious yellow Cake! I was in such a mood for yellow cake (NOT WHITE) and looky here. There exists a yellow cake recipe that only uses 1 egg (not just yolks like others) I don't like wasting egg so I am particularly glad this used a whole egg. 

Cake: 

  • 1/2 cup + 3 tablespoons all-purpose flour
  • 1 tablespoon cornstarch
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt (see notes)
  • 1/8 teaspoon baking soda
  • 6 tablespoons unsalted butter, softened (see notes!)
  • 1/2 cup granulated sugar
  • 1 egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup buttermilk, room temp (see note for sub)
Frosting:

4 tablespoons ( 2oz) unsalted butter softened*
1 cup ( 120g) powdered sugar sifted
1/4 cup ( 20g) cocoa powder sifted
1 1/2 teaspoons milk plus more as needed
1/2 teaspoon vanilla extract
Pinch of espresso powder optional
Pinch of salt (see notes)

Directions:

Preheat oven to 350 degrees F. Lightly grease a 6" round pan and lay parchment round on bottom. 

Cream butter then add sugar. Add vanilla and egg.

Mix all dry ingredients in a bowl.

In mixer, take turns adding flour and buttermilk until well incorporated

Pour in 6" round pan and bake for 20-25 minutes. Mine took 25 minutes. 

Make frosting. Set aside. 

Let cool on rack for 30 minutes before adding frosting. Don't ever frost within 20 minutes. Cool appropriately!

Eat! 

NOTES:

No buttermilk? Well grab your 1/3 cup of milk maybe just shy of 1/3 cup and add 1 tsp of vinegar or lemon juice. I used white vinegar. Very important that it's room temp and you let it stand at least 15 minutes. 

If you used salted butter, then don't add additional salt. I used salted butter for both the cake and frosting without adding more. Came out awesome.

Also on the same topic of butter, take note that it's NOT a full stick of butter! I made the mistake of adding a whole stick of butter room temp to my mixer and realized too late 😭. I had to eye ball 2 tbsp to remove but it obviously not enough. My cake had a very overly butter sweat to it right out of the oven. Cake still taste great but it the greasiness of it was off putting. 

Espresso powder is absolutely optional in the frosting. I didn't have it so I didn't use it! Frosting still chocolatey as fuck. 👍
