Small Batch Snickerdoodle Cupcake Crumbl Cookies

  I am totally late to the Crumbl crowd but hey better late than never. I LOVE snickerdoodle cookies but Crumbl are known for oversized cookies that have a cakey texture to it and today I thought I'd share a recipe to make half a dozen cookies! It sucks that my family does not have a sweet tooth like me which is why I sought out small batch recipes and ultimately to creating this blog.  Not recommended to eat in one sitting or even for 1 person at all! I think 1 cookie per person is best due to all the sugar. If you got at least 5 more friends then by all means, bring this to your next potluck. Bigger recipe listed in my sources. Impossible Coconut Pie for 1

Sweet little snack for 1! Great for portion control. I never had an Impossible Coconut Pie so I decided to go through my first batch of non picture posts and start testing those recipes out. One obstacle is finding a reasonable egg substitute. Some have very unorthodox egg measurements for a small batch recipe so I will have to figure that out. This was the first easy recipe I saw.  Made with this 10 oz square ceramic . Enjoy!  Ingredients:  1/4 cup milk 2 tablespoons flaked coconut 2 tablespoons applesauce (see notes) 1/8 teaspoon vanilla extract 1 tablespoon all-purpose flour 2-1/4 teaspoons margarine (see notes) 1 tablespoon + 1 teaspoon sugar 1/8 teaspoon ground nutmeg 1. Preheat oven to 350 degrees 2. Mix milk, coconut, eggs, vanilla, flour, margarine, and sugar in blender.  3. Pour into a greased, single-serving custard dish. Sprinkle nutmeg on top.  4. Roasted Honey Garlic Carrots for 1

Super yummy as a side or even as a quick snack! Roasted Honey Garlic Carrots for 1 5 baby carrots sliced lengthwise in half 2 TBSP butter 1/2 TBSP honey 1 garlic minced 1/8 tsp salt 1 tsp dried parsley Preheat oven to 350 degrees F In medium heat melt butter Saute butter and garlic Add honey  Add carrots with salt and parsely Toss in skillet for about 5 minutes Aluminum lined dish (I used a small cake pan) bake for 5 minutes if you want a soft crunch but a few more minutes for softer bite. (I guess you COULD continue tossing in skillet but you risk burning the honey. Next time I test this recipe, I'll check if I could do a lower oven temp.) Top with a pinch of kosher salt Remove and enjoy!
