Potato Soup for 1
I was nervous about trying out this recipe but it actually works! Just use a small pot. I used a 2qt pot. 1qt might be better.
Ingredients:
1/4 onion diced
1 tbsp flour
1 potato cut into small chunks cubed or triangles whateva
1 cup milk
1/4 cup chicken broth (or 1/4 tsp knorr chicken bouillon dissolved in 1/4 cup water)
1/8 Dried garlic mince
1/3 cup cheese shredded of your choice
1/3 cup sour cream (equal to 5tbsp +1tsp)
Salt and pepper to taste
1. Fry bacon. Remove bacon. I used a sauce pan to fry it. I doubt it would be ideal to fry in a small pot but you can try if ya want.
2. In bacon fat, saute diced onions.
3. Once onions nicely golden, add flour and mix around about 1 minute more.
4. Add garlic, milk and chicken broth.
5. Still in the sauce pan I use the spatula to scrape up those yummy brown bits from the bacon from step 1. Once you do that carefully transfer to 2 qt pot. Use a ladle if it makes it easier for you. Definitely don't want to lose any of that yummy soupy stuff!
6. Once in the pot add potatoes and crank up the heat to boil. Once boiled for a minute or 2 turn down the heat to simmer for those potatoes to cook. If cut small enough then it should cook in no time!
7. Once potatoes are at a nice soft mush turn the heat off and add the sour cream and cheese. Cup bacon thinly and add to soup unless you like chunky bacon you can cut it chunky. And bam! Eat up son.
Add some salt and pepper to taste. Sometimes I sprinkle a little bit of chicken bouillon
