Keto 1 egg Mayo
If you're like me and like mayo every once in a while but don't exactly want to buy a jar that will ultimately go bad? Well, I scoured far and wide and finally found a recipe I actually like!
Mayo Recipe
1 large egg
1 tablespoon lemon juice
1/2 tablespoon Dijon mustard
1/4 teaspoon salt, or to taste
1/4 teaspoon white pepper
1 cup avocado oil
Directions
1. Use an immersion blender, preferably the long and tall glass. This is the product I used. (Not an affiliated link! Only used for example)
2. Dump all the ingredients in.
3. Put the setting at a medium speed and press the button while keeping contact with the bottom of the container for at least 30 seconds.
4. When mayo starts to set, move the immersion blender slowly in an up and down motion for up to another 30-45 seconds until it is all creamy.
5. That is it! There is your mayo!
Make sure when you store it in the fridge to write a date on the container. I personally just put it in a small bowl with plastic wrap covering and touching the mayo to avoid a skin.
There's a lot of things you can do with this small batch mayo:
*tuna sandwiches
*deviled eggs
*spinach dip
*Slather a few dollops on a corn on the cob sprinkled generously with old bay seasoning!! Fucking YUM!
*same for baked salmon!
The possibilities are endless! (Okay, there is but I wanted an excuse to say that)
Note: In the original recipe, lemon juice as the alternate for vinegar. When I used vinegar, it tasted like shit. I always have lemons in stock so I fresh squeezed lemon juice and it is infinitely more better.
