Mac and Cheese for 1

Lovely side with some savory mac and cheese! Don't worry if you don't have the EXACT kind of cheese. Experiment! Half and half isn't necessary or you could make your own half and half if you have milk and heavy cream. I personally fried up some buffalo chicken wings to give my pasta a slight kick. You can too.

Update: After making this recipe a few times, I feel it is more appropriate to include a recipe that truly fits a recipe for 1. The slightly bigger batch will immediately follow.

Ingredients:

1/2 tbsp butter

1/2 tbsp flour

1/4 cup milk

1/4 cup half and half

1/16 tsp garlic powder

1/16 tsp mustard powder

3/4 cup shredded cheese

1/4 tsp hot sauce (optional)

pinch of salt and pepper

2 oz of pasta (can vary slightly more if using a thicker noodle such as rotini)

generous pinch of popcorn salt or french fry seasoing is optional for a boost of flavor


Directions:

1. Melt butter in a small pot. In a separate pot, boil a small pot of water pouring in noodles once boiled. Noodles cook in about 7-10 minutes. Stir in between.

2. Make a roux with the flour and whisk until it turns golden with a nutty flavor. Should take a few minutes.

3. Slowly add milk and half and half. Make sure it is 1/4 cup at a time and don't add more until it is all evenly incorporated.

4. Add seasonings.

5. Add cheese.

6. Set aside to cool.  

7. In a big bowl, mix in the noodles with the sauce and enjoy! Add addition protein if you like. I added buffalo chicken wings and tore them up.

DOUBLE THE ABOVE RECIPE:

3/4 cup cheddar cheese

3/4 cup monterrey jack

4 oz pasta shells (ehh...about 1 1/2 cups can differ depending on noodle of choice.
