Mini Banana Loaf for 1
If you only have 2 bananas on hand, then here is a very cute yet small recipe for 1 mini loaf BONUS! Not all of the batter will fit, the excess is perfect for 8 mini muffins! Links below right after the recipe.
Ingredients
2 bananas - very ripe!
1 cup flour
1/2 cup sugar
1/4 tsp salt
3/4 baking soda
1 egg
1/2 tsp vanilla
1/4 cup shredded coconut
6 tbsp melted butter
GLAZE:
2 tbsp maple syrup
6 tbsp powdered sugar
1/2 tsp cinnamon
Directions:
1. Preheat oven to 350 degrees. Mash bananas in a bowl. Then add sugar, egg, melted butter and vanilla
2. In another bowl, mix flour, salt, baking soda and coconut.
3. Put the flour bowl and mix in with the wet ingredients.
4. Fill about 3/4 of the batter into the mini loaf pan.
5. Use the remaining batter to use one spoon to scoop into 8 mini cavities.
6. Bake mini muffins for 15 minutes or until sides are golden brown.
7. Bake loaf for 25 minutes or until test toothpick/knife in the middle and it comes out clean.
8. Remove and let rest for 10 minutes before eating.
9. Make the glaze and slowly apply. It will harden quickly.
