2 Cheese Biscuits

Image
I've ate this by itself but also in an egg biscuit. Yummy! 1/2 cup Almond Flour 1/4 tsp baking powder  1/8 tsp Himalayan salt 1/2 cup shredded cheese (1.5 oz) 1 egg 1 tbsp melted butter 1 tbsp sour cream Grease sheet. Makes 2 biscuits.  400 F for 9 minutes.  Depending on what products you use, it may be a little too high in fat. Apps like Carb Manager can help calculate macros.

Keto Meatloaf for 1

Image
I started the keto diet. I hate the word "diet" but it's basically just low carb way of eating. From this point forward, I will do just about everything keto. I will need a weight scale and guesstimation. Pro tip on the unorthodox "1/5 tsp" that does NOT exist: Just do 1/4 tsp and then wipe with your finger a layer off to better resemble 1/5 tsp. These are just the calculations Carb Manager gave me when scaling down. Ingredients: 6.4 oz ground meat  2/5 tsp salt 1/5 tsp pepper 2/5 tsp ground mustard pinch of onion power  4/5 tsp paprika (just shave a layer or 2 from a regular 1 tsp) 1/5 caraway seeds 1 tbsp + 2 tsp parmesan fresh shredded.  1/2 tbsp ground flax seed  1 tbsp water Directions: Preheat oven 350 degrees F. In a small bowl or cup, mix ground flaxseed with the water. Set aside  at least 15 minutes to thicken (this is your egg substitute) Whip out that weight scale and weigh out 6.4 oz of ground meat. In a regular bowl, mix the ground meat and all

Keto Stuffed Jalapeños for 1

Image
This is honestly my first time having stuffed jalapenos. In my 35 years of existence....I never! Shocker, I know! But I used up half a brick of cream cheese and I needed to hurry up and use the last half before it expired and I found it! Only need 1/4 of the brick, I ended up using the other 1/4 for cheese and crackers. Ingredients: 3 jalapenos (I used canned pickled jalapenos) 2 oz cream cheese (1/4 of a brick) 2 tbsp shredded cheese generous pinch of garlic powder generous pinch of onion powder 3 slices of bacon (thick recommended) salt and pepper to taste orange pepper as topping Directions: Slice stem off jalapeno and vertically slice jalapenos. Scoop out the innards. Should have 6 pieces. In a small bowl, mix cream cheese, shredded cheese, garlic powder, onion powder, salt and pepper to a paste. Cut bacon in half to make 6 pieces. Fill each half with the cream cheese. Filling will be like playdough.  Wrap each of the 6 pieces with 1/2 slice of bacon. Set on parchment paper and

Green Bean Au Gratin for 1

Image
This specific dish is best for when you want to figure out what to do with half a can of green beans. I used the first half when I made picadillo the other day. I didn't want it to go to waste so I came across this recipe from Chef John from Fooooood Wishes. Otherwise, I wouldn't recommend you do this recipe unless you use the full can, drained. Did You Know? For the longest time my dumb ass has been pronouncing "au gratin" wrong for most of my life. It's correctly pronounced like "aww grah-tawn". So glad I didn't say it out loud to anyone as an adult. Hee hee. 1 cup green beans (half of a 7 oz can) 1 tbsp dijon mustard pinch of kosher salt pinch of pepper 3/4 cup heavy cream 1 tbsp parmesan cheese 2 oz of shredded cheese 2 tbsp butter 1/3 cup breadcrumbs dash or two of cayenne Directions: 1. With spare butter, grease a small casserole dish and set aside. In a small pot, melt 2 tbsp butter. When melted, pour in a bowl and mix with bread

Mac and Cheese for 1

Image
Lovely side with some savory mac and cheese! Don't worry if you don't have the EXACT kind of cheese. Experiment! Half and half isn't necessary or you could make your own half and half if you have milk and heavy cream. I personally fried up some buffalo chicken wings to give my pasta a slight kick. You can too. Update: After making this recipe a few times, I feel it is more appropriate to include a recipe that truly fits a recipe for 1. The slightly bigger batch will immediately follow. Ingredients: 1/2 tbsp butter 1/2 tbsp flour 1/4 cup milk 1/4 cup half and half 1/16 tsp garlic powder 1/16 tsp mustard powder 3/4 cup shredded cheese 1/4 tsp hot sauce (optional) pinch of salt and pepper 2 oz of pasta (can vary slightly more if using a thicker noodle such as rotini) generous pinch of popcorn salt or french fry seasoing is optional for a boost of flavor Directions: 1. Melt butter in a small pot. In a separate pot, boil a small pot of water pouring in noodles once boiled. N

Small Batch Snickerdoodle Cupcake Crumbl Cookies

Image
I am totally late to the Crumbl crowd but hey better late than never. I LOVE snickerdoodle cookies but Crumbl are known for oversized cookies that have a cakey texture to it and today I thought I'd share a recipe to make half a dozen cookies! It sucks that my family does not have a sweet tooth like me which is why I sought out small batch recipes and ultimately to creating this blog.  Not recommended to eat in one sitting or even for 1 person at all! I think 1 cookie per person is best due to all the sugar. If you got at least 5 more friends then by all means, bring this to your next potluck. Bigger recipe listed in my sources. Ingredients : Cookie Dough: 1 ¾ cups flour 1/2 cup butter 1/2 cup brown sugar ¼ cup white sugar 1 egg ½ tsp vanilla ½ tbsp corn starch ½ tsp baking soda ½ tsp salt Cinnamon Sugar: ½ tbsp white sugar ½ tsp cinnamon Cream cheese frosting: 4 tbsp butter 4 oz cream cheese 1 ½ cups powdered sugar ½ tsp vanilla Directions: 1. Preheat oven to 350 F. M
