Keto Meatloaf for 1
I started the keto diet. I hate the word "diet" but it's basically just low carb way of eating. From this point forward, I will do just about everything keto. I will need a weight scale and guesstimation.
Pro tip on the unorthodox "1/5 tsp" that does NOT exist: Just do 1/4 tsp and then wipe with your finger a layer off to better resemble 1/5 tsp. These are just the calculations Carb Manager gave me when scaling down.
Ingredients:
6.4 oz ground meat
2/5 tsp salt
1/5 tsp pepper
2/5 tsp ground mustard
pinch of onion power
4/5 tsp paprika (just shave a layer or 2 from a regular 1 tsp)
1/5 caraway seeds
1 tbsp + 2 tsp parmesan fresh shredded.
1/2 tbsp ground flax seed
1 tbsp water
Directions:
Preheat oven 350 degrees F.
In a small bowl or cup, mix ground flaxseed with the water. Set aside at least 15 minutes to thicken (this is your egg substitute)
Whip out that weight scale and weigh out 6.4 oz of ground meat.
In a regular bowl, mix the ground meat and all the spices and cheese. When flax mixture is thickened, add the flax.
Put the meatloaf in a small pan. I used this mini 5.75"x3" loaf pan which fits perfect! Link to Amazon. If you don't have one, you can easily form with your own hands and place it in a meatloaf pan. Sheet pan not recommended.
Bake for 25 minutes or until internal temp is 155 degrees F.
Let cool 5 minutes or so before eating.
There will probably be juices flowing! I actually like to use this as a kind of dipping sauce for the meat loaf bites. It tastes great by itself so no sauce is even necessary. On Carb Manager, this is equal to 2 slices AKA 1 suggested serving.
