Lasagna for 1
Holy hell ain't this the cutest thing ever?! Here's how to make a mini lasagna for 2. Or if you're a fat fuck like me that loves huge portions, this could totally be a dish for one! Don't forget you can make side dishes for this too like stuffed mushrooms and mashed potatoes.
Dish used is a 5x5 square ceramic.
First we need to make the marinara. If you want to be super duper fast at making this dish then used canned garbage Prego or some shit. I kid! But you can still use it if you want. No judge. Marinara gives lasagna some flavuh!
1/3 cup minced onions (or 50g)
1 garlic
7.5 oz tomatoes diced
1 tsp tomato paste
2 tsp Italian seasoning
1/3 tsp salt
1/3 tsp pepper
1/3 tsp sugar
Meat optional (I intended in using frozen meatballs in here but I didn't have any. Still taste great!)
Saute onions. When fragrant saute garlic for 30 seconds.
Add diced tomatoes a few minutes until they break down a little. Doesn't take long.
Add tomato paste, sugar, Italian season, salt and pepper.
Turn down heat to low and let simmer for 30 minutes covered.
Cook 2 lasagna noodles. I used oven ready noodles which does not require boiling but working with soft noodles is preferred. Break carefully into a just shy of 5 inch pieces. Uneven is fine because who gives a fuck it's getting eaten anyway. Fit your 5 x 5 dish or whichever one you're using.
Spoon 3-4 spoonfuls of tomato sauce at the bottom of dish.
Place 2 noodles down.
Pour half of marinara on noodles. Top with a generous amount of cheese.
Set last 2 noodles. Pour last of marinara and generous amount of cheese.
Place your small dish preferably on a baking sheet to catch potential spillage.
Bake in 375 degree oven for 30 minutes.
Let rest for 10. Sprinkle some parsley.
Bam!! Dinner!!
