Cortadillo for 4 (or 1!)
OMG I am so glad to finally be able to make a post about cortadillo! I loved this mexican dessert as a kid and now I finally make a PROPER recipe! This recipe works with an 8 inch square pan so I cannot say how other pans will turn out.
Ingredients:
1 cup flour
1 tsp baking powder
1/8 tsp salt
pinch of baking soda
1 cup buttermilk (see note)
2 tbsp + 2 tsp vegetable oil (see note)
1 tsp vanilla
1/3 cup + 2 tbsp + 2 tsp sugar
1 egg
Frosting:
1 cup powdered sugar
1 tbsp butter
1/3 tsp vanilla (see note)
1 tbsp + 1 tsp milk
2 drops of red food coloring
Preheat oven to 350 degrees F.
Mix first 4 ingredients in one bowl.
In second bowl mix the rest of the ingredients. Pour dry ingredients with wet ingredient mixture in sections.
In 8 inch square pan cut and place parchment paper and pour all ingredients in pan.
Once preheated, bake for 27 minutes. (see notes)
Ensure cake is done by inserting toothpick or knife to poke center of cake. When it comes out clean, immediately remove cake and let cool 30-45 minutes.
Once cooled, make the frosting (see note)
Pour frosting on the completely cooled cake. Add sprinkles.
EAT!
Will also work in a 1/4 sheet pan measurements: 10.4 x 8.1 baked at same oven temp but this time at 23 minutes since it is thinner.
Notes:
You can make buttermilk but measuring and adding 1 tbsp freshly squeezed lemon juice in a cup. Fill the rest of the cup with milk. Stir and let at room temperature for at least 15 minutes before using mixture for batter.
Another note about buttermilk. This was originally supposed to be 1/3 cup + 1 tbsp + 1 tsp of buttermilk but in my goofiness, I forgot to measure it and just poured the entire cup in there!!!! I was scared it might come out dense BUT it was so light and fluffy!! My tongue did feel a low tingle that may have been from the lemon juice or something but it' not a cause for alarm at all. Maybe it's just be. Could be different for you. Cake still tasted great!
I never have vegetable oil on hand. Always avocado. Use whatever you want.
If you don't have a 1/3 tsp of vanilla then eye ball the best you can with just under 1/2 tsp. Link to Amazon if you want to buy the spoons containing 1/3 tsp.
It is VERY important to wait until it is mostly cooled before you make the frosting. It's on the thin side so it will harden. Either cover it while you wait or make it when you are ready. Takes less than 5 minutes to make the frosting anyway.
A good rule of thumb is to bake 8 inch pans at a rate of 1.29 minutes per ounce of batter. My batter came out to 21 oz. Could be more or less depending on your ingredients or kind of oven you have.BTW.

I love that channel but I cannot stand her strained try hard fast food cashier voice and repetition in her wording that it seriously irks the fuck out of me. I still enjoy her channel regardless and she actually does have amazing recipes. This is supposed to be 1/3 scaled from her original recipe.
