Mini Calzones For 1 (No Yeast!)
Ideal for a quick snack or can be an appetizer on game nights. For 1, that is. Nope, not authentic at all. No yeast either. Yes, I guess they can be called "pizza pockets". I call it YUMMY. Everything here is something to make on short notice. Scale way up if you want to feed more people.
Ingredients:
Dough:
Dry:
3/4 cup of all purpose flour
1/2 tsp baking soda
1/4 + 1/8 tsp salt
1/4 tsp brown sugar
Wet:
50 ml water
24 ml milk
1 tbsp oil (any kind)
+Any toppings you want in to use
Pizza Sauce:
8 oz can of tomato sauce
1/4 tsp oregano
1/4 tsp basil
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp kosher salt
1/8 tsp sugar
1/8 tsp pepper
Garlic Sauce:
1 tbsp butter
1/4 tsp garlic powder
1/8 tsp onion powder
1/8 tsp oregano
1/8 tsp parsley dried
parmesan cheese for sprinkle after done baking.
Directions:
1. Preheat oven to 400 degrees F.
2. For the dough, mix all dry ingredients in one bowl.
3. Using a food scale, measure the water and milk. Add the 1 tbsp of oil from measuring spoon.
4. Mix dry and wet ingredients together and knead to form a dough. Add small pinches of flour as necessary.
5. Use a rolling pin to flatter dough to desired thickness (think tortilla).
6. Use the 1 cup measuring cup to punch holes in the dough. You should get 8. Tear out and re-roll as necessary until you get 8.
7. Use the excess leftover dough to make the 9th calzone. It will be at least twice as big as the mini calzones. Can be pressed with hands to form dough.
8. In a separate bowl mix all ingredients for pizza sauce and use a small spoon to dollop pizza sauce in the center of each circle cutouts.
9. Use a small amount of either shredded cheese (chunks is PERFECT) and any other toppings you want to add. Do not overload at all. It may initially look like not a lot but trust. It's enough.
10. Gently stretch dough over and seal/crimp the calzones shut. Use a fork to pinch securely.
11. Oil a baking pan (or place parchment paper/aluminum foil). After placing all calzones in baking sheet, lightly blot oil on every calzone.
12. Bake in 400 degree oven for 15 minutes.
13. When removed from oven after 15 minutes, make the garlic sauce by gently melting butter and mix in the rest of the seasonings. With a brush or spoon, apply the garlic sauce to each calzone. Use parmesan to top each calzone.
14. Let cool about 5-10 minutes before eating.
