Keto Stuffed Jalapeños for 1

This is honestly my first time having stuffed jalapenos. In my 35 years of existence....I never! Shocker, I know! But I used up half a brick of cream cheese and I needed to hurry up and use the last half before it expired and I found it! Only need 1/4 of the brick, I ended up using the other 1/4 for cheese and crackers. Ingredients: 3 jalapenos (I used canned pickled jalapenos) 2 oz cream cheese (1/4 of a brick) 2 tbsp shredded cheese generous pinch of garlic powder generous pinch of onion powder 3 slices of bacon (thick recommended) salt and pepper to taste orange pepper as topping Directions: Slice stem off jalapeno and vertically slice jalapenos. Scoop out the innards. Should have 6 pieces. In a small bowl, mix cream cheese, shredded cheese, garlic powder, onion powder, salt and pepper to a paste. Cut bacon in half to make 6 pieces.   If you only have 2 bananas on hand, then here is a very cute yet small recipe for 1 mini loaf BONUS! Not all of the batter will fit, the excess is perfect for 8 mini muffins! Links below right after the recipe. Ingredients 2 bananas - very ripe! 1 cup flour 1/2 cup sugar 1/4 tsp salt 3/4 baking soda 1 egg 1/2 tsp vanilla 1/4 cup shredded coconut 6 tbsp melted butter GLAZE: 2 tbsp maple syrup 6 tbsp powdered sugar 1/2 tsp cinnamon Directions: 1. Preheat oven to 350 degrees. Mash bananas in a bowl. Then add sugar, egg, melted butter and vanilla 2. In another bowl, mix flour, salt, baking soda and coconut. 3.   This specific dish is best for when you want to figure out what to do with half a can of green beans. I used the first half when I made picadillo the other day. I didn't want it to go to waste so I came across this recipe from Chef John from Fooooood Wishes. Otherwise, I wouldn't recommend you do this recipe unless you use the full can, drained. Lovely side with some savory mac and cheese! Don't worry if you don't have the EXACT kind of cheese. Experiment! Half and half isn't necessary or you could make your own half and half if you have milk and heavy cream. I personally fried up some buffalo chicken wings to give my pasta a slight kick. You can too. Update: After making this recipe a few times, I feel it is more appropriate to include a recipe that truly fits a recipe for 1. The slightly bigger batch will immediately follow.   I am totally late to the Crumbl crowd but hey better late than never. I LOVE snickerdoodle cookies but Crumbl are known for oversized cookies that have a cakey texture to it and today I thought I'd share a recipe to make half a dozen cookies! It sucks that my family does not have a sweet tooth like me which is why I sought out small batch recipes and ultimately to creating this blog.  Not recommended to eat in one sitting or even for 1 person at all! Ideal for a quick snack or can be an appetizer on game nights. For 1, that is. Nope, not authentic at all. No yeast either. Yes, I guess they can be called "pizza pockets". I call it YUMMY. Everything here is something to make on short notice. Scale way up if you want to feed more people. Scalloped Potatoes for 1

Scalloped potatoes is easily one of the most underrated side dishes so I decided to dive in and find a small recipe for 1. This is a simple yet delicious recipe. Due to the long baking time, don't count on this being an instant dish ready in 10 minutes. I suppose you could expedite the process by cooking on the stove top for a few minutes but I have not tested that variation yet. Don't let the dark bits fool ya to think it is burnt. That's the cheese! Yum! Reminds me of Lay's chips. Ingredients: 1 medium potato 1/4 cup heavy cream  1/4 cup shredded mozzarella cheese healthy pinch or 2 of cayenne pinch of salt and pepper Directions: Preheat oven to 350 degrees.
