Keto 1 egg Mayo

If you're like me and like mayo every once in a while but don't exactly want to buy a jar that will ultimately go bad? Well, I scoured far and wide and finally found a recipe I actually like!  Mayo Recipe 1  large   egg 1  tablespoon l emon juice 1/2  tablespoon   Dijon mustard 1/4   teaspoon   salt,  or to taste 1/4   teaspoon   white pepper 1  cup  avocado oil Directions 1. Use an immersion blender, preferably the long and tall glass.  This is the product I used.  (Not an affiliated link! Only used for example) 2. Dump all the ingredients in. 3. Put the setting at a medium speed and press the button while keeping contact with the bottom of the container for at least 30 seconds. 4. When mayo starts to set, move the immersion blender slowly in an up and down motion for up to another 30-45 seconds until it is all creamy.  5. That is it! There is your mayo! Yellow Cake for 1

Delicious yellow Cake! I was in such a mood for yellow cake (NOT WHITE) and looky here. There exists a yellow cake recipe that only uses 1 egg (not just yolks like others) I don't like wasting egg so I am particularly glad this used a whole egg.  Cake:  1/2 cup + 3 tablespoons all-purpose flour 1 tablespoon cornstarch 3/4 teaspoon baking powder 1/4 teaspoon salt (see notes) 1/8 teaspoon baking soda 6 tablespoons unsalted butter, softened (see notes!) 1/2 cup granulated sugar 1 egg, room temperature 1 teaspoon vanilla extract 1/3 cup buttermilk, room temp (see note for sub) Frosting: 4 tablespoons ( 2oz) unsalted butter softened* 1 cup ( 120g) powdered sugar sifted 1/4 cup ( 20g) cocoa powder sifted 1 1/2 teaspoons milk plus more as needed 1/2 teaspoon vanilla extract Pinch of espresso powder optional Pinch of salt (see notes) Directions: Preheat oven to 350 degrees F. Alfredo for 1

Love this recipe. This alone gets me full! You can absolutely elevate this meal adding leftover cooked chicken or vegetables. This recipe is just the base Alfredo sauce recipe if you want a small helping in a pinch. Ingredients: 1 tbsp butter 2 & 1/4 tsp flour 1/8 tsp pepper 1/8 tsp salt 1/2 cup half and half  1/4 cup Parmesan 4 oz angel hair or noodle of your choice Fettuccine is the default noodle but I personally love angel hair so that's what I used for this recipe. Impossible Coconut Pie for 1

Sweet little snack for 1! Great for portion control. I never had an Impossible Coconut Pie so I decided to go through my first batch of non picture posts and start testing those recipes out. One obstacle is finding a reasonable egg substitute. Some have very unorthodox egg measurements for a small batch recipe so I will have to figure that out. This was the first easy recipe I saw.  Made with this 10 oz square ceramic . Enjoy!  Ingredients:  1/4 cup milk 2 tablespoons flaked coconut 2 tablespoons applesauce (see notes) 1/8 teaspoon vanilla extract 1 tablespoon all-purpose flour 2-1/4 teaspoons margarine (see notes) 1 tablespoon + 1 teaspoon sugar 1/8 teaspoon ground nutmeg 1. Preheat oven to 350 degrees 2. Mix milk, coconut, eggs, vanilla, flour, margarine, and sugar in blender.  3. Pour into a greased, single-serving custard dish. Sprinkle nutmeg on top.  4. Potato Salad for 1

Yummy little snack for 1 single person to enjoy!!  Ingredients: 1 medium-large potato 4 tbsp mayo 1/2 tbsp yellow mustard 1/2 tbsp Dijon mustard 1 tbsp sliced pickles 1-2 boiled eggs chopped 1/8 tsp smoked paprika (or more!) Salt and pepper to taste Directions: 1. Boil eggs. Let cool until peel. 2. Set a pot of water and cut potato to desired size and cook in pot 10-15 minutes. 3. While that is cooking put together the mayo, mustards, pickles and paprika in a small boil. 4. Combine chopped boiled eggs and potatoes!  I made my own mayo! Keep an eye out for a post how to make mayo from 1 egg!  I got inspired by this recipe but I did leave some stuff out. Next time I make this recipe I'll see to more better adapt this recipe. Mexican Rice for 1

Made with 1/4 cup of rice. I grew up on mexican rice my mom frequently made but today I will show you how to make a small batch portion. For 1! No tomato canned sauce welcome here! I'll say why at the end of my post.  Best served as a side of your mini dinner with  enchiladas  and  flour tortillas . Will work on a small batch beans recipe. I'm sure that won't be hard.  Ingredients: 1/4 cup rice Dash of oil 1/4 cup water Molcajete Ingredients: 1 garlic clove 1/4 tsp salt 1/8 tsp peppercorns 1/8 tsp cumin whole  1/4 cup water  Blender ingredients: 1 Roma tomato 1/8 onion  Directions: 1. In molcajete grind the listed ingredients. I don't have a molcajete but I was able to score a mortar and pestle for 5 bucks at a flea market. Lookin' like dis: *While I did have peppercorns I did NOT have whole cumin. I just added equal sized cumin ground  to it and it was fine.  2. When blended, add 1/4 cup of water and slowly incor...

Personal Pan Pizza COOKIE! Bonus Meringue Cookie recipe

I was in the mood for not just a cookie but a cookie PIZZA! This is basically a deep dish. Cute for a mini pizza party dessert. I forgot to snap a pic before eating a piece so now we got to deal with a pac man mug.  Amazon link to cake pan used.  Not affiliate.  Ingredients: 1/4 cup melted butter 8 tsp sugar 1/4 cup brown sugar 1 large egg yolk (see notes for egg white) 1 tsp vanilla extract 1/4 tsp baking soda 1/8 tsp salt 1/2 cup flour 1/3 cup chocolate chips (see notes) Directions: 1. Gently melt butter. Preheat oven to 350 degrees.  2. Gradually add both sugars, vanilla, egg yolk, baking soda and salt. 3. Gently mix in flour. When incorporated fold in chocolate chips. 4. Oil up a 6 inch pan. I used a cake pan with 2 inch sides. 5. Press down cookie dough. 6. Bake for 18-24 minutes. I did 18 minutes while it initially looked too doughy and underdone it will obviously stiffen up to in all the right places! So don't overcook unless you want a brick....
