2 Cheese Biscuits

I've ate this by itself but also in an egg biscuit. Yummy! 1/2 cup Almond Flour 1/4 tsp baking powder  1/8 tsp Himalayan salt 1/2 cup shredded cheese (1.5 oz) 1 egg 1 tbsp melted butter 1 tbsp sour cream Grease sheet. Makes 2 biscuits.  400 F for 9 minutes.  Depending on what products you use, it may be a little too high in fat. Apps like Carb Manager can help calculate macros. 

Keto Meatloaf for 1

I started the keto diet. I hate the word "diet" but it's basically just low carb way of eating. From this point forward, I will do just about everything keto. I will need a weight scale and guesstimation. Pro tip on the unorthodox "1/5 tsp" that does NOT exist: Just do 1/4 tsp and then wipe with your finger a layer off to better resemble 1/5 tsp. These are just the calculations Carb Manager gave me when scaling down. Ingredients: 6.4 oz ground meat  2/5 tsp salt 1/5 tsp pepper 2/5 tsp ground mustard pinch of onion power  4/5 tsp paprika (just shave a layer or 2 from a regular 1 tsp) 1/5 caraway seeds 1 tbsp + 2 tsp parmesan fresh shredded.  1/2 tbsp ground flax seed  1 tbsp water Directions: Preheat oven 350 degrees F. Keto Stuffed Jalapeños for 1

This is honestly my first time having stuffed jalapenos. In my 35 years of existence....I never! Shocker, I know! But I used up half a brick of cream cheese and I needed to hurry up and use the last half before it expired and I found it! Only need 1/4 of the brick, I ended up using the other 1/4 for cheese and crackers. Ingredients: 3 jalapenos (I used canned pickled jalapenos) 2 oz cream cheese (1/4 of a brick) 2 tbsp shredded cheese generous pinch of garlic powder generous pinch of onion powder 3 slices of bacon (thick recommended) salt and pepper to taste orange pepper as topping Directions: Slice stem off jalapeno and vertically slice jalapenos. Scoop out the innards. Should have 6 pieces. In a small bowl, mix cream cheese, shredded cheese, garlic powder, onion powder, salt and pepper to a paste. Cut bacon in half to make 6 pieces.   If you only have 2 bananas on hand, then here is a very cute yet small recipe for 1 mini loaf BONUS! Not all of the batter will fit, the excess is perfect for 8 mini muffins! Links below right after the recipe. Ingredients 2 bananas - very ripe! 1 cup flour 1/2 cup sugar 1/4 tsp salt 3/4 baking soda 1 egg 1/2 tsp vanilla 1/4 cup shredded coconut 6 tbsp melted butter GLAZE: 2 tbsp maple syrup 6 tbsp powdered sugar 1/2 tsp cinnamon Directions: 1. Preheat oven to 350 degrees. Mash bananas in a bowl. Then add sugar, egg, melted butter and vanilla 2. In another bowl, mix flour, salt, baking soda and coconut. 3.   This specific dish is best for when you want to figure out what to do with half a can of green beans. I used the first half when I made picadillo the other day. I didn't want it to go to waste so I came across this recipe from Chef John from Fooooood Wishes. Otherwise, I wouldn't recommend you do this recipe unless you use the full can, drained. Lovely side with some savory mac and cheese! Don't worry if you don't have the EXACT kind of cheese. Experiment! Half and half isn't necessary or you could make your own half and half if you have milk and heavy cream. I personally fried up some buffalo chicken wings to give my pasta a slight kick. You can too.   I am totally late to the Crumbl crowd but hey better late than never. I LOVE snickerdoodle cookies but Crumbl are known for oversized cookies that have a cakey texture to it and today I thought I'd share a recipe to make half a dozen cookies! It sucks that my family does not have a sweet tooth like me which is why I sought out small batch recipes and ultimately to creating this blog.  Not recommended to eat in one sitting or even for 1 person at all! Ideal for a quick snack or can be an appetizer on game nights. For 1, that is. Nope, not authentic at all. No yeast either. Yes, I guess they can be called "pizza pockets". I call it YUMMY. Everything here is something to make on short notice. Scale way up if you want to feed more people. Scalloped potatoes is easily one of the most underrated side dishes so I decided to dive in and find a small recipe for 1. This is a simple yet delicious recipe. Due to the long baking time, don't count on this being an instant dish ready in 10 minutes. I suppose you could expedite the process by cooking on the stove top for a few minutes but I have not tested that variation yet. Don't let the dark bits fool ya to think it is burnt. That's the cheese! Yum! Reminds me of Lay's chips. Ingredients: 1 medium potato 1/4 cup heavy cream  1/4 cup shredded mozzarella cheese healthy pinch or 2 of cayenne pinch of salt and pepper Directions: Preheat oven to 350 degrees. Small Batch Strawberry Paletas

You could say I am on a strawberry roll lately. Who cares?! Here is a bomb ass small batch recipe for strawberry paletas. It's mexican ice cream. I used to LOVE these in high school where they usually get sold from a variety of flavors for only $1. Times have changed so I imagine it's double the price now lol. Mexican ice cream has cream based and water based varieties (think cucumber and lime).  I used a cheapo ice popsicle mold that holds 1/4 cup per mold. This small recipe ended up yielding me 7 paletas. I got the mold at a yard sale but if I had to guess, these probably came from Dollar Tree due to how small it is BUT who says that's a bad thing? I honestly prefer the smaller size for portion control.  I'll test other flavors so be sure to check the paletas tag at the bottom of this post in the coming months. Strawberry Crisp for 1

  Ingredients: Filling: 8oz strawberries (about half a carton) 2 Tbsp + 2 tsp sugar 1 tsp vanilla 3/4 tsp corn starch pinch of ground ginger Topping: 2 tbsp + 2 tsp old fashioned oats 2 1/2 tbsp all purpose flour 2 tbsp brown sugar 1 tbsp butter pinch of kosher salt Directions: 1. Preheat oven to 350 degrees. 2. Rinse and core strawberries. Chop in thirds. 3. Put the rest of the filling ingredients with strawberries. 4. In a small dish dump the filling in it 5. In a separate bowl mix all ingredients for the topping. With hands or fork mix together and make sure butter is in pea sized amounts. 6. Bake in oven for 30-45 minutes.

Healthy Carrot Soup for 1

Healthy as heck and this truly is a recipe for 1 person! Great savory carrot soup that requires minimal ingredients and basically no spices!  Ingredients: 1/2 tbsp butter 1/2 tbsp oil 1 garlic (small-medium) 1/2 onion chopped *see note pinch of thyme or parsley 1 cup of carrots 1 celery chopped 1/2 cup water 1 cup chicken broth 1/4 half and half (optional) pinch of salt and pepper Directions: 1. In a 2 quart pot, add the butter and/or oil and saute onions and celery for a few minutes. 2. Once fragrant, add garlic for 30 seconds. 3. Stir in the chopped carrots along with water and chicken broth. 4. Crank it up so it boils. Once boiling, lower heat to simmer. Cover and let simmer for 25 minutes. 5. Remove from heat for about 10-15 minutes so it can cool down a little bit. 6. Pour contents in a blender and puree for 10-15 seconds. 7. EAT AND ENJOY!! UPDATE! Cortadillo for 4 (or 1!)

OMG I am so glad to finally be able to make a post about cortadillo! I loved this mexican dessert as a kid and now I finally make a PROPER recipe! This recipe works with an 8 inch square pan so I cannot say how other pans will turn out. Ingredients: 1 cup flour 1 tsp baking powder 1/8 tsp salt pinch of baking soda 1 cup buttermilk (see note) 2 tbsp + 2 tsp vegetable oil (see note) 1 tsp vanilla 1/3 cup + 2 tbsp + 2 tsp sugar 1 egg Frosting: 1 cup powdered sugar 1 tbsp butter 1/3 tsp vanilla (see note) 1 tbsp + 1 tsp milk 2 drops of red food coloring Preheat oven to 350 degrees F.  Mix first 4 ingredients in one bowl.  In second bowl mix the rest of the ingredients. Pour dry ingredients with wet ingredient mixture in sections.  In 8 inch square pan cut and place parchment paper and pour all ingredients in pan. Once preheated, bake for 27 minutes. Keto 1 egg Mayo

If you're like me and like mayo every once in a while but don't exactly want to buy a jar that will ultimately go bad? Well, I scoured far and wide and finally found a recipe I actually like!  Mayo Recipe 1  large   egg 1  tablespoon l emon juice 1/2  tablespoon   Dijon mustard 1/4   teaspoon   salt,  or to taste 1/4   teaspoon   white pepper 1  cup  avocado oil Directions 1. Use an immersion blender, preferably the long and tall glass.  This is the product I used.  (Not an affiliated link! Only used for example) 2. Dump all the ingredients in. 3. Put the setting at a medium speed and press the button while keeping contact with the bottom of the container for at least 30 seconds. 4. Delicious yellow Cake! I was in such a mood for yellow cake (NOT WHITE) and looky here. Love this recipe. This alone gets me full! You can absolutely elevate this meal adding leftover cooked chicken or vegetables. This recipe is just the base Alfredo sauce recipe if you want a small helping in a pinch. Ingredients: 1 tbsp butter 2 & 1/4 tsp flour 1/8 tsp pepper 1/8 tsp salt 1/2 cup half and half  1/4 cup Parmesan 4 oz angel hair or noodle of your choice Fettuccine is the default noodle but I personally love angel hair so that's what I used for this recipe. Impossible Coconut Pie for 1

Sweet little snack for 1! Great for portion control. I never had an Impossible Coconut Pie so I decided to go through my first batch of non picture posts and start testing those recipes out. One obstacle is finding a reasonable egg substitute. Some have very unorthodox egg measurements for a small batch recipe so I will have to figure that out. This was the first easy recipe I saw.  Made with this 10 oz square ceramic . Enjoy!  Ingredients:  1/4 cup milk 2 tablespoons flaked coconut 2 tablespoons applesauce (see notes) 1/8 teaspoon vanilla extract 1 tablespoon all-purpose flour 2-1/4 teaspoons margarine (see notes) 1 tablespoon + 1 teaspoon sugar 1/8 teaspoon ground nutmeg 1. Preheat oven to 350 degrees 2. Mix milk, coconut, eggs, vanilla, flour, margarine, and sugar in blender.  3. Pour into a greased, single-serving custard dish. Sprinkle nutmeg on top.  4. Potato Salad for 1

Yummy little snack for 1 single person to enjoy!!  Ingredients: 1 medium-large potato 4 tbsp mayo 1/2 tbsp yellow mustard 1/2 tbsp Dijon mustard 1 tbsp sliced pickles 1-2 boiled eggs chopped 1/8 tsp smoked paprika (or more!) Salt and pepper to taste Directions: 1. Boil eggs. Let cool until peel. 2. Set a pot of water and cut potato to desired size and cook in pot 10-15 minutes. 3. While that is cooking put together the mayo, mustards, pickles and paprika in a small boil. 4. Combine chopped boiled eggs and potatoes!  I made my own mayo! Keep an eye out for a post how to make mayo from 1 egg!  I got inspired by this recipe but I did leave some stuff out. Next time I make this recipe I'll see to more better adapt this recipe. Mexican Rice for 1

Made with 1/4 cup of rice. I grew up on mexican rice my mom frequently made but today I will show you how to make a small batch portion. For 1! No tomato canned sauce welcome here! I'll say why at the end of my post.  Best served as a side of your mini dinner with  enchiladas  and  flour tortillas . Will work on a small batch beans recipe. I'm sure that won't be hard.  Ingredients: 1/4 cup rice Dash of oil 1/4 cup water Molcajete Ingredients: 1 garlic clove 1/4 tsp salt 1/8 tsp peppercorns 1/8 tsp cumin whole  1/4 cup water  Blender ingredients: 1 Roma tomato 1/8 onion  Directions: 1. In molcajete grind the listed ingredients. I don't have a molcajete but I was able to score a mortar and pestle for 5 bucks at a flea market. Lookin' like dis: *While I did have peppercorns I did NOT have whole cumin. I just added equal sized cumin ground  to it and it was fine.  2. When blended, add 1/4 cup of water and slowly incor...

Personal Pan Pizza COOKIE! Bonus Meringue Cookie recipe

I was in the mood for not just a cookie but a cookie PIZZA! This is basically a deep dish. Cute for a mini pizza party dessert. I forgot to snap a pic before eating a piece so now we got to deal with a pac man mug.  Amazon link to cake pan used.  Not affiliate.  Ingredients: 1/4 cup melted butter 8 tsp sugar 1/4 cup brown sugar 1 large egg yolk (see notes for egg white) 1 tsp vanilla extract 1/4 tsp baking soda 1/8 tsp salt 1/2 cup flour 1/3 cup chocolate chips (see notes) Directions: 1. Gently melt butter. Preheat oven to 350 degrees.  2. Gradually add both sugars, vanilla, egg yolk, baking soda and salt. 3. Gently mix in flour. When incorporated fold in chocolate chips. 4. Oil up a 6 inch pan. I used a cake pan with 2 inch sides. 5. Press down cookie dough. 6. Bake for 18-24 minutes. I did 18 minutes while it initially looked too doughy and underdone it will obviously stiffen up to in all the right places! So don't overcook unless you want a brick....
